- In a small bowl, combine warm milk, yeast, and 1 tablespoon of the sugar. Let sit for 5–10 minutes until foamy.
- In a large mixing bowl, whisk together remaining sugar, eggs, melted butter, salt, and vanilla extract.
- Add the yeast mixture to the egg mixture and mix well.
- Gradually add flour, mixing until a sticky dough forms. Knead by hand or with a dough hook for 5–7 minutes, until the dough is smooth and elastic.
- Place the dough in a lightly greased bowl, cover with a clean towel or plastic wrap, and let rise in a warm place until doubled in size, about 1 hour.
- Punch down the dough and turn it out onto a floured surface. Roll to about 1/4-inch thickness. Cut the dough into 2-inch squares using a sharp knife or pizza cutter.
- Heat oil in a deep pot or fryer to 350°F.
- Fry beignets in batches, 3–4 at a time, for 1–2 minutes per side until puffed and golden brown. Use a slotted spoon to transfer to a paper towel-lined tray.
- While still warm, generously dust beignets with powdered sugar. Serve immediately.
