01 - 4 boneless, skinless chicken thighs (about 1.3 pounds)

01 - In a large mixing bowl, whisk together Greek yogurt, olive oil, minced garlic, lemon juice, cumin, coriander, paprika, cinnamon, turmeric, salt, and pepper until well combined. Add chicken thighs and toss thoroughly to coat evenly with the marinade.
02 - Cover the bowl and refrigerate for at least 30 minutes. For optimal flavor and tenderness, marinate overnight, but no longer than 24 hours.
03 - Preheat oven to 400°F or heat a grill pan over medium-high heat. Line a baking sheet with parchment paper if using the oven method.
