Corned Beef Cheese Sliders (Printable)

Mini sandwiches featuring tender corned beef, melted cheese, and tangy mustard mayo on soft slider buns.

# What You’ll Need:

→ Breads

01 - 12 slider buns or mini brioche buns

→ Meats

02 - 14 oz cooked corned beef, thinly sliced

→ Cheeses

03 - 12 slices Swiss cheese (or cheddar, if preferred)

→ Condiments & Toppings

04 - 3 tbsp Dijon or yellow mustard
05 - 3 tbsp mayonnaise
06 - 12 small dill pickle slices
07 - 1 small red onion, thinly sliced (optional)
08 - 2 tbsp unsalted butter, melted
09 - 1 tsp poppy seeds (optional, for topping)

# How-To Steps:

01 - Preheat the oven to 350°F. Line a baking sheet with parchment paper.
02 - Slice the slider buns in half horizontally. Place the bottom halves on the prepared baking sheet.
03 - Spread a thin layer of mayonnaise and mustard on the bottom halves of the buns.
04 - Layer sliced corned beef evenly over each bun. Top with a slice of cheese.
05 - Add a pickle slice and optional red onion to each slider.
06 - Place the top halves of the buns on each slider. Brush the tops with melted butter and sprinkle with poppy seeds if using.
07 - Cover the sliders loosely with foil and bake for 10 minutes. Remove the foil and bake for another 5 minutes, until the cheese is melted and the tops are golden.
08 - Serve immediately while warm.

# Expert Tips:

01 -
  • These disappear faster than any party food I have ever made, even with people who claim they are not hungry
  • The assembly is so simple that you can prep everything ahead and bake them right when guests arrive
02 -
  • Tent the foil loosely so the cheese melts without steaming the buns into mush
  • Let them rest for 3 minutes after baking or the cheese will slide right off when you bite in
03 -
  • Ask for corned beef sliced thinly at the deli counter, thick slices make these tough to eat
  • Swap Swiss for provolone if you want something milder, or sharp cheddar for more kick
